New Years Spinach Pie



I was asked to post my recipe for my New Year Spinach Pie.  I love making it, and it's become a New Years tradition.  Last year I made a gluten free version, but since I had no one with any allergies I used a regular pie crust. 

First, make your favorite pie crust --or-- buy the already made and rolled crust from the store.  Place the bottom layer on your cooking surface and sprinkle bread crumbs on top.  Set aside the top layer for now.

Next make the filling.  Once you have the filling made, arrange the filling into an outer ring, and a center ball.  Place the top layer of pie crust on top, and put a large mouth cup in the center to create the center filling area.  Use a fork to mold the crust together.  Once this is done, use a sharp knife to cut the outer lying ring into many "petals" and then using your hand, carefull turn each "petal" so that the spinach filling can be seen and each "petal" is on its side. 

Now bake the pie for about 30 minutes at 350 degrees Farenheight.

The recipe for the filling is below:

15 oz Ricotta Cheese
1 bag of Baby Spinach (wilted)
1 Egg
aproximately 4 oz of Parmagiano cheese grated
